I am a server at a busy restaurant and I can answer this question. We don't have time for trays. Trays mean putting trays away. Not using a tray gets you more tips because people think you are cool. Using a tray, in this industry, for things other than mass amounts of food (and you can fit a lot of plates in your hands just like this guy with the cups) means you are inexperienced or a wuss. I honestly think he was going this slowly for the camera. He is probably a rock-awesome ninja.

The video cuts off halfway through the feat. Watching him unload the tea to an impressed table would have been very satisfying. Though, I believe he will throw them on the table (after a show of dance, of course) and they will safely fall in front of the guests.
